Well, here is a new ship coming out in 2020 that you might want to consider booking. It's called the BOLT: Ultimate Sea Coaster.
The roller coaster contains 800 feet of track reaching speeds of almost 40mph which seems crazy. You'll get a 360-degree view of the water from 187 feet above the ocean.
Now, if you're familiar with cruises, most activities on the ship are included in your fee, however, this will be an additional cost. However, it's a freaking roller coaster on the water, you got to do it!
